What you'll need:
Ground beef, between 1/4 and 1/2 lb. per person, but no less than 1 lb. total
2 eggs per pound of ground beef
1/2 cup of "filler" (bread crumbs, matzoh meal, that kind of thing) per pound of ground beef
Bacon strips
Seasonings -- this is left up to you; I usually use salt and lemon pepper
Mix ground beef, eggs, seasonings, and filler in a large mixing bowl. When thoroughly mixed, put the concoction into a pyrex loaf dish (you know, those rectangular glass dishes that are about two inches or so deep) making sure you pack the concoction tightly in the dish. Put the strips of bacon along the top of the mixture lengthwise from one end of the dish to the other. You should have at least two rows of bacon on top of the mixture.
Put in a 350 degree oven until the meat is thoroughly cooked (usually 90 minutes; your mileage may vary). Take the dish from the oven and, if you're not serving it immediately, cover the dish with foil and put it in the fridge.
With one pound of beef, you should get four two-slice servings.
Mom always used the bacon to add moisture to the meatloaf -- she hated dry meatloaf!
The leftovers make for good sandwiches over the next day or two, too.
Those who want can try adding finely chopped onions to the mixture, or putting barbecue sauce or marinade on the top (with or without the bacon). But the above recipe is what my mom used.
