General: Roast Pork with Garlic and Apples

The secret to this tender, juicy pork is to marinate it in a "brine" -- a simple solution of water and salt.
BRINE
Water
1 apple, cut into eighths
1/4 cup kosher salt
1/4 cup sugar
4 large garlic cloves, crushed
2 teaspoons whole black peppercorns
4 fresh sage leaves, or 1 teaspoon dried
--------------------
2-1/2 pounds boneless, center-cut pork loin
2 apples, peeled, cored and cut into eighths
2 tablespoons finely chopped garlic
2 tablespoons chopped fresh sage, or 2 teaspoons dried
1 tablespoon olive oil
2 teaspoons cider vinegar
1/2 teaspoon freshly ground pepper
1/4 teaspoon salt
1. Make brine: Microwave 2 cups water in a microwaveproof bowl on High 3 minutes, until steaming. Stir in apple, salt, sugar, garlic, peppercorns and sage until sugar has almost dissolved. Add 2 cups cold water. Cool to room temperature.

General: Grilled Banana Split

This is an easy and great dessert.
1 cup maple syrup
1/2 cup dark rum
1/4 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg, grated
4 slightly green banana, peeled
2 pints vanilla ice cream
1 cup whipped topping
1/4 cup coconut, shredded
2 tablespoons macadamia nuts, shredded
1. Heat and oil grill.
2. For the maple sauce, whisk together maple syrup, rum, sugar, cinnamon, and nutmeg in large bowl until sugar dissolves.
3. Place bananas on clean grill and cook, turning frequently, until lightly browned on all sides and almost tender, 6 to 8 minutes. Transfer to cutting board and slice diagonally into 1/2-inch-thick slices. Stir hot bananas into maple sauce and marinate in the refrigerator 3 hours.
4. Place 2 scoops ice cream in the center of 4 shallow bowls; divide and spoon banana mixture over each scoop. Divide and top each with whipped cream, toasted coconut and macadamia nuts. Makes 4 servings.
